Buffalo Chicken Flatbread

Servings: 4 people

Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 1 flatbread
  • ½ to 1 cup low fat / skim milk mozzarella cheese
  • A few tablespoons of buffalo sauce
  • 1 cup diced onions & mushrooms or other veggies
  • 1-2 tsp olive oil
  • Salt & pepper to taste
  • Italian seasoning
  • Red pepper flakes optional
  • 1 Salad Kit optional

Method
 

  1. Preheat oven to 350 degrees
  2. Dice up chicken breast and veggies
  3. Heat oil in skillet
  4. Add chicken to skillet, season with salt and pepper and saute until cooked through.
  5. Add diced veggies and saute for a few more minutes until veggies are soft
  6. Add buffalo sauce to chicken and veggie. Remove skillet from heat.
  7. Spread chicken and veggie mixture evenly across the flatbread
  8. Top with shredded cheese and italian seasoning (and optional red pepper flakes)
  9. Bake in oven until flatbread is crispy and cheese is melted

Notes

If you don’t like buffalo sauce omit it and make the pizza using a traditional red sauce
Enjoy with a salad
