Method
- Heat skillet over medium-high heat
- Add protein and saute until almost cooked through
- Add diced veggies and cook until softened
- Add taco seasoning, tomato paste and chicken stock
- Lower heat, cover and simmer for 20-30 mins
- Serve with your favorite taco toppings
Notes
Swap beef for chicken or another preferred protein source
If using beef, I don’t use cooking oil. If using another protein source, I use approximately 1 tbsp of olive oil
