  • Cheese: Choose your favorite variety – cheddar, Monterey Jack, or a Mexican blend work well. You can also opt for a low fat cheese option of your preference.
  • Onion: Small onion finely chopped.
  • Peppers: Use a mix of colors for added visual appeal and flavor. Bell peppers or spicy varieties like jalapeños work great.
  • Chorizo: Look for quality chorizo sausage, either pre-cooked or raw.
  • Salt and pepper: To taste.
  • Optional toppings: Salsa, avocado, sour cream, or hot sauce for serving.

Instructions:

  1. Prep Ingredients:
    • If using raw chorizo, cook it first in a skillet over medium heat until browned and cooked through. Remove from skillet and set aside.
    • In the same skillet, add a bit of oil if needed and sauté the chopped onions and peppers until they’re soft and slightly caramelized. Remove from skillet and set aside.
    • Scramble the eggs in the skillet until they’re cooked to your desired doneness. Season with salt and pepper to taste.
    • Warm the flour tortillas either in the microwave or on a dry skillet for a few seconds to make them pliable.
  2. Assemble the Burritos:
    • Lay out a tortilla and layer on the ingredients in the center: eggs, black beans, cooked chorizo, sautéed onions and peppers, and a sprinkle of cheese.
    • Be careful not to overfill the burrito to make rolling easier.
  3. Roll the Burritos:
    • Fold in the sides of the tortilla, then fold the bottom edge over the filling and roll tightly to form a burrito.
