Roasted Honey Cinnamon Butter Sweet Potatoes

Thanksgiving is this week and if you’re like us, you’ve snagged a box of locally grown sweet potatoes we had for sale at the gym, and need to have an awesome side dish made for the big meal on Thursday…which is exactly what brought you here, right? I knew it! Enter this easy, quick side that’s sure to steal the show!

This recipe is a power house! Sweet potatoes are a good source of vitamin A, potassium, fiber and vitamins B1 and B2. Adding in grass fed butter for a healthy fat, local raw honey is great for allergy relief and cinnamon has many health benefits as well. Some studies show it has antioxidant properties, reduces inflammation and it might help control blood sugar for some people with diabetes. So add this side to your meal planning list and treat all your friends and family to a healthy AND delicious side dish!

INGREDIENTS
  • 5 sweet potatoes, peeled and diced into 1 inch cubes
  • ¼ cup grass fed butter, melted
  • ¼ cup local raw honey
  • 2 teaspoons cinnamon

 

INSTRUCTIONS

  1. Preheat oven to 425 degrees. In a large bowl add the sweet potatoes, butter, honey and cinnamon and toss to coat.
  2. Spread the sweet potatoes into a single layer on a baking sheet. Bake for 30-35 minutes stirring halfway though.
  3. Toss the sweet potatoes in the sauce at the bottom of the pan and serve.
