Spinach and Three Cheese Manicotti

This is such a wonderful take on Italian food! The mixture of creamy rich spinach and three cheese ricotta topped with marinara and more melted cheese makes this dish delicious. This is a great meal for vegetarians or those just wanting to cut back on red meat, or you can add sausage to mix it up!

Ingredients:

1 box (8 oz.) manicotti shells, cooked al dente
24 oz. marinara sauce

Filling:

10 oz. frozen/fresh spinach, cooked and drained
15 oz. ricotta cheese
1 large egg, beaten
1½ cups mozzarella cheese, shredded and divided
½ cup Parmesan cheese, shredded
Salt and pepper to taste

 

 

 

 

Instructions:
1. Cook manicotti shells and spinach according to package directions
2. Combine spinach, ricotta cheese, egg, 1 cup mozzarella cheese, Parmesan cheese and salt and pepper to taste and mix well
3. Stuff each cooked manicotti shell with filling mixture
4. In a baking dish, spread 1 cup marinara sauce on the bottom evenly
5. Arrange stuffed manicotti over sauce
6. Top with remaining sauce and leftover ½ cup of mozzarella
7. Bake at 350 degrees F for 30 minutes
8. Dish and serve hot
