Kats Tomato Soup Recipe

If you’re looking for a quick and easy weeknight recipe the whole family will love, you’re going to enjoy this delicious buffalo chicken flat bread recipe.

Ingredients

  • 2-3 tbsp butter or olive oil
  • 2 cans of whole tomatoes
  • 2 onions, diced
  • 3 whole carrots, peeled and diced
  • 1 tbsp minced garlic
  • 1-2 bay leaves
  • 1 tbsp dried basil
  • 2 cups chicken stock
  • 1-2 tbsp tomato paste
  • Cracked pepper and salt, to taste
  • Up to 1/4 cup of half and half, optional
  • Red pepper flakes, optional
  • Parmesan cheese, optional
  • Cottage cheese, optional

Method 

  • Dice veggies
  • Heat Dutch oven or thick bottomed pot on medium heat. Heat butter or oil. Add diced veggies and sauté for 10-12 mins
  • Add garlic. Sauté for a few more mins
  • Add tomatoes, stock, basil, paste, pepper, salt
  • Cover and simmer for 10-30 mins (the longer it simmers the more the flavors meld)
  • Use an immersion blender to smooth out the consistency
  • Add half and half and stir to combine
  • Top with cottage cheese, parmesan cheese, red pepper flakes, or other toppings, as desired.

Notes

  • If you like other toppings, use them.
  • Add some crusty bread on the side.
  • If you like your tomato soup less thick, use more chicken stock.
