Most of you know that I love anything that resembles a taco. So it wasn’t surprising when for dinner last night I decided to throw together nachos with leftover pulled pork from Super Bowl weekend. (If you are new, welcome and you may want to check out this taco blog for dinner inspiration.)
Nachos are a quick and easy way to switch up your dinner routine while also using up items you’ve got in your fridge and pantry. Below is my nacho recipe that I hope you take and make your own with whatever you have on hand.

Quick & Easy Nachos Recipe
Ingredients
- Tortilla Chips (the kind you like)
- Protein (also the kind you like; we used pulled pork)
- 1 can black beans, 14.5 oz
- 1 can mild green chiles, 6 oz
- Diced onion
- Diced tomatoes
- Shredded cheese
- Other toppings you can add before or after baking: lettuce, salsa, taco sauce, olives, sour cream, jalapeños, etc.
Method
- Preheat oven to 375
- Line a cookie sheet with parchment paper
- Spread tortilla chips on parchment paper. Go for as single to double layered so you get proper cheese ‘meltage’
- Sprinkle cheese on the tortilla chips
- Layer all the other ingredients you’re using on top of the tortilla chips and cheese.
- Sprinkle more cheese on top.
- Put into the oven and bake for 8-12 minutes until all the cheese is melted and the nachos look a little crispy.
- Serve immediately and top with your favorite toppings
Notes
- The world is truly your oyster with nachos. Use the toppings you like, sub out the protein based upon what you have. Be creative!
- Coordinate nachos during a dinner week you know you’re going to have excess protein prepared so you’ve got another way to easily re-use those leftovers
- Save leftover nachos for tomorrow’s breakfast and throw an egg (or two) on top (can anyone say heuvos rancheros?)
- For my hand portion trackers, when you’re loading up your nachos, make sure you’ve got enough palms of protein for each serving.
- If you’re looking for additional produce, add some additional veggies on the side (e.g. a salad) or enjoy a piece of fruit with your nachos.
